Position Summary
We are seeking a talented, passionate, and driven Sous Chef to join our culinary leadership team. This is a rare opportunity to work in an elite environment where creativity, precision, and consistency are paramount. The Sous Chef will support the Executive Sous Chef and Executive Chef in overseeing all kitchen operations—from daily prep to private events—ensuring the delivery of world-class cuisine. This role requires a dynamic individual with strong leadership skills, an eye for detail, and a desire to develop professionally within a high-performing team.
The Sous Chef exhibits culinary talent by personally performing tasks while helping lead the kitchen staff and manage all food-related functions. This role also includes supervising all kitchen areas to ensure the production of consistent, high-quality products.
Success in this position will be achieved through the Sous Chef's ability to train and develop staff, instilling the club’s standards and creating a clear path for advancement into higher kitchen positions.
The ideal candidate is career-focused and aspires to grow into an Executive Chef position in the future.
Executive Sous Chef Duties and Responsibilities:
· Creates a “one team” mentality with FOH and BOH.
· Ensure that all recipes and product yields are accurately costed and reviewed regularly.
· Ensure that all food items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste.
· Ensure that food stock levels within the culinary department areas are of sufficient quantity and quality in relevance to function forecasts.
· Ensure that all food preparation equipment is being used safely and correctly, cleaned, and maintained.
· Ensure that all culinary operations manuals are prepared and updated.
· Ensure that the Department’s overall operational budgets are adhered too.
· Ensure that a consistent first-class product of the highest quality is achieved and maintained in all culinary areas, whilst adhering to operational deadlines.
· Creative menu planning and correct food preparation for each outlet.
· Ensure that all relevant banquet set-ups are prepared ahead of guest’s arrival.
· Be aware of new items, which are introduced onto the market and keep up with the latest product trends.
· To initiate relevant maintenance reports and work orders supported by the respective follow up of those items actioned.
· To project a positive and motivated attitude amongst all associates.
· Work with the purchaser to Ensure that all food products received are of the required standard and quality and that they are stored and rotated correctly.
· Responsible for the supervision of all stewards and their activities within the culinary department.
· Ensure that the overall culinary department is motivated and that positive feedback on work performance is given.
· To delegate responsibilities to subordinates as required.
· Coach and counsel employees in a timely manner and in accordance with Company policy.
· The Sous Chef leads and performs his duties with the intention of developing staff in order to improve the overall kitchen’s performance. This person is a leader through coaching, and a developer of talent.

Kitchens are hectic, especially during busy dining hours. Running kitchen requires successful sous chefs to possess the ability to think on their feet and make quick decisions under pressure. Sometimes this means hopping on the line to help out the line cooks or doing other tasks that are technically below their job description. Versatility combined with leadership skills and the ability to remain calm in a chaotic environment are the trademarks of a good executive sous chef.
· Collaborating with the executive chef to create menu options based on expertise with specific cuisines
· With a strong attention to detail, making sure hygiene and food safety standards are met in all stages of food preparation
· Following a strict regimen to check freshness of food and ordering supplies as necessary
· Displaying good team spirit and organization skills for an efficient flow of production
· Produce high-quality dishes

Education:
A culinary diploma from a recognized institution or higher is preferred. Vast experience in lieu of certifications will be considered.
Experience:
At least 3 to 5 years’ experience with 3 years in a similar management position.
