Comprehensive Job Duties - Cooks
Station Management (Mise en Place): Responsible for the complete setup and breakdown of assigned stations (sauté, grill, pantry, etc.). Maintain high-level prep work, including precise knife work and portioning. Ideally you are able learn every station.
Multi-Venue Execution: Maintain consistent quality across four distinct service environments: Clubhouse Fine Dining, Bar & Grill, Poolside Kitchen, and High-Volume Banquets.
Technical Excellence: Expertly follow standardized recipes and plating guides. Demonstrate proficiency in various cooking methods to ensure all food meets the Club’s aesthetic and quality standards.
The "Organized Hustle": Balance speed and accuracy during high-volume service. You must be a "flex" player, able to pivot between stations as demand shifts throughout the day.
Safety & Professionalism: Strict adherence to knife safety, food storage protocols, and sanitation standards. Maintain a "clean as you go" work area and a positive, team-first attitude.
Dishwashing & Kitchen Utility
The Engine of the Kitchen: Responsible for the timely cleaning and sanitization of all plateware, glassware, silverware, and cooking equipment.
Organization: Maintain a structured and clean dish pit area to ensure the kitchen has the tools needed to stay in "the flow" during peak service.
Facility Support: Assist with general kitchen cleanliness, including trash removal, floor maintenance, and chemical safety protocols.
Team Growth: While this is a utility role, we provide opportunities for those who show initiative to assist with basic food prep and cross-train in other culinary areas.
